I was treated for 6 years by Dr. Maricio Bonacini at USC in Los Angeles. His initial pitch to me was very much like yours. I appreciate your responses. I firmly believe the information available to the general public and to 90% of the doctors out there practicing on hep c people is grossly incorrect and functions to scare us all into trying the various interferons.
 
I have had hep c for 30 years. I had a biopsy 8 years ago and one last year, only marginal progression of liver disease appeared on the latest one and that is skewed by the readings being done at different labs.
 
I also go to a Chinese Traditional Medicine Doctor who sniffs his nose at the Western concern for hep c as it's been in China for many thousands of years. When I aske him if there was anything I should do or way I should eat, he told me "Don't eat spicy foods..."
 
So I don't eat too many spicy foods. I don't drink either.

If the most recent biopsy showed mild disease, i believe you can justify watching and waiting with periodic biopsies. however, if you have genotype 2 or 3 infection, a treatment period of as brief as 6 months could bring about 80+% clearance rates. in such a circumstance, you may therefore wish to consider treatment to eliminate your risk of any progression.
